Cajun-Style Chicken Nuggets (microwave)
Highly seasoned chicken chunks, coated with cumin, chili powder and thyme, cook quickly for your convenience.

Preparation time: 15 mins
Cooking time: 6 mins
Serving Size: 8

Ingredients
1 package dry onion soup mix
1/2 cup dry bread crumbs
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon crushed dried thyme
1/4 teaspoon cayenne pepper
2 pounds fresh boneless, skinless chicken breasts, cut into 1-inch-wide strips
3 tablespoons vegetable oil

Directions
In large bowl combine dry onion soup mix, dry bread crumbs, chili powder, cumin, thyme and cayenne pepper.
Dip chicken in bread crumb mixture, coating well.
Arrange in a microwave-safe dish; drizzle with oil.
Cook in microwave uncovered on HIGH for 6 to 10 minutes, or until done (see NOTE). Drain on paper towels.

Note: Chicken Test for Doneness (per Washington Fryer Commission) No matter what method you use for cooking chicken, the most accurate test for doneness is a meat thermometer. Since chicken is never ready to be served unless it is done, always be sure it is completely cooked. Whole or bone-in chicken should reach an internal temperature of 180F, and boneless chicken should be cooked to 165F. Other indicators for doneness include: 1) A fork or toothpick can be inserted with ease. 2) The juices should be clear, not pink. 3) Bone joints move easily.
